The dorsal part of yellowfin tuna is extra juicy and stands out with its rich and intense flavor compared to other parts of the fish. The fish contains no added oils, so you will also notice a subtle natural saltiness of the ocean in the fillets.

After being caught, the tuna are transported to the coastal region of La Rioja, where they are processed by a local company with many years of experience using traditional artisanal techniques.
